Things I love…Warm Stuffed Pepper

Spinach is one of my favourite superfoods. This power plant is rich in iron which helps support  the function of our red blood cells. It’s also a great source of vitamin A, vitamin K, vitamin C and folic acid as well as being a good source of manganese, magnesium, iron and vitamin B2. I love mixing it with garlic to make a delicious filling for a stuffed pepper to give me a much needed boost at the end of the day. Why not give it a go yourself? It couldn’t be simpler…

Ingredients:

  • 3 generous handfuls of spinach
  • 1 whole pepper
  • 1 small clove of garlic
  • 2 thin slices of mozzarella cheese
  • 1/2 cup brown rice
  • 1 vegetable stock cube

Method:

Simply fry the garlic in a pan and add the spinach until it shrinks a little

Cut the pepper in half and put the spinach mixture on top

Pop in the oven at 170 degrees for 30/35 minutes until soft

Whilst the pepper is cooking, boil the rice in a pan with some vegetable stock for flavour

When the pepper is cooked, pop some mozzarella cheese on top and brown off under the grill

Serve up, and enjoy!

Taking in plenty of fluids is my number one tip for keeping the skin plump and hydrated. My favourite is water with a slice of cucumber or lemon. Adding a little flavour is awakening, rejuvenating and the addition of lemon also gives the immune system a boost.

Look after your liver

Beautiful skin depends on a healthy working liver to flush out daily toxins from our diet and the environment. Alcohol, caffeine and saturated fats can all provoke liver build up, so it’s important to monitor our intake.
